Happy National Amaretto Day Everyone!

Not that any of us need an excuse to drink more of our favorite almond liqueur, but this seems like a holiday worth celebrating. After many rounds of experimentation I landed on this cocktail which highlights the nutty sweetness of the amaretto without being syrupy sweet. The name came from the fact that the flavor is similar to another cocktail, The Godfather. OK its also about the movie a little. A lot of the balance of this drink is based on the sweet vermouth you choose so you can experiment with different vermouths to suit your tastes.

Did you know that many amarettos don’t use almonds at all, but rather peach or apricot pits? They are much cheaper and still contain the same organic compound, benzaldehyde, that gives bitter almonds their aroma.
